I grew up eating my dad's BBQ in Kansas, spoiled by the delicious food coming off his Weber. Guests would regularly invite themselves over to eat whatever my dad was cookin'! When we moved to Texas, the BBQ here was different, but the results were always the same. Once you start a fire and get meat involved, people start showing up, and people are always smiling!
I don't need much of an excuse to fire up my Franklin BBQ Pit (Grilly Wonka) and my PK Grill. (Grill Murray) I do things the old fashioned way, no pellet smokers or gas here... In my backyard, we cook low and slow, using real wood, maintaining real fires. The process to get from raw meat to authentic TX BBQ is time consuming, but the time spent in front of the fire with family and friends is arguably the best part!
I can officially say the BBQ coming out of my backyard is both "award winning" and "as seen on tv" after winning a chili cookoff with my oldest son in 2022 and smoking some meat/acting in a Joel Osteen commercial back in 2021. Recently, I started cooking for friends when they're in Houston on tour, and I've even figured out how to make vacuum sealed BBQ to-go...
